                     Mint Chip Ice Cream Pie

 

You’ll need:

8 ounces chopped semi-sweet chocolate chips,

melted 4 cups crisped rice cereal (such as Rice Krispies)

2 pints mint chocolate chip ice cream, slightly softened

 

In a large bowl, combine cereal and chocolate until cereal is coated. Transfer to a 9 inch springform pan. Press the mixture to the bottom and 1 inch up the sides of the pan. Freeze until firm, 5 to 10 minutes.Spread the ice cream into the prepared crust and freeze, covered, until firm, up to 2 hours and up to 3 days.

Gloomy Day Smothie- A smoothie to cool you down on hot summer days

 

You’ll need:

1 mango peeled and seeded, cut into chunks ( or frozen mango chunks)

1 banana peeled and chopped

1 cup orange juice

1 cup vanilla nonfat yogurt

 

Place all ingredients in a blender. Blend until smooth. Serve with whipped cream, if you’d like.
